500g (1lb 2oz) cher­ries 150g (5½oz) dark 70% cocoa choco­late, bro­ken into pieces 2 star anise 1½tbsp runny honey 75ml (2½fl oz) chi­anti or other fruity red wine A dash of sin­gle cream (op­tional), to serve Stone your cher­ries, then pop them in the fridge. You can serve them at room tem­per­a­ture, but they’re much nicer chilled.

Place the choco­late and star anise in a heat­proof bowl and warm over a pan of gen­tly sim­mer­ing wa­ter, mak­ing sure the wa­ter doesn’t touch the bowl. Once melted, stir in the honey and red wine.

Pour into a bowl (dis­card star anise), swirl in a lit­tle cream if you like and serve with the cher­ries, let­ting ev­ery­one help them­selves.
