CHERRIES & CHOCOLATE
500g (1lb 2oz) cherries 150g (5½oz) dark 70% cocoa chocolate, broken into pieces 2 star anise 1½tbsp runny honey 75ml (2½fl oz) chianti or other fruity red wine A dash of single cream (optional), to serve Stone your cherries, then pop them in the fridge. You can serve them at room temperature, but they’re much nicer chilled.
Place the chocolate and star anise in a heatproof bowl and warm over a pan of gently simmering water, making sure the water doesn’t touch the bowl. Once melted, stir in the honey and red wine.
Pour into a bowl (discard star anise), swirl in a little cream if you like and serve with the cherries, letting everyone help themselves.
