FRIED EGG RANCHERO STYLE

In a pan, heat a lit­tle oil, add half a finely sliced onion plus a pinch each of cumin and chilli pow­der and cook for 2-3 min­utes. Add a tin of drained black-eyed beans, heat through gh and sea­son. Serve on toast with 2 large freerange fried eggs, 2tbsp gua­camole, a dol­lop of tomato salsa and some fresh co­rian­der.
