In European Rieslings you might want to stick to Alsace if you don’t want any sweetness (but you will be missing out). Here’s a seriously sleek example with the grape’s trademark tartness allied to firm, fresh fruit and a dry — bone dry — finish. Last time I had it was with oysters. Perfect.
