Morgon Les Charmilles 2012
A wine from one specific Beaujolais village, namely Morgon, full of Gamay fruit and so low on tannins that you can treat this red as a white and chill it right down (but remember: the cooler the wine the less you can taste and smell). I’ve had this with Toulouse sausage. It’s also worth trying with salmon, incidentally.
