Sift 250g (9oz) plain flour into a bowl. Add 250g (9oz) cubed but­ter to the flour and rub it in loosely. Make a well in the mix­ture and pour in about 120-150ml (4-5fl oz) of cold wa­ter, mix­ing un­til you have a firm, rough dough, adding ex­tra wa­ter if needed. Cover with cling­film and leave to rest for 20 min­utes in the fridge.
