How to make puff pastry
Sift 250g (9oz) plain flour into a bowl. Add 250g (9oz) cubed butter to the flour and rub it in loosely. Make a well in the mixture and pour in about 120-150ml (4-5fl oz) of cold water, mixing until you have a firm, rough dough, adding extra water if needed. Cover with clingfilm and leave to rest for 20 minutes in the fridge.
