Well, I’ll ad­mit that it’s not for ev­ery­one: dry sherry can take your breath away. Bone-jan­glingly dry, but crisp and fresh with some­thing of freshly baked bread and a marine tang of salt, this is a very adult wine, a fab­u­lously so­phis­ti­cated aper­i­tif, again with green olives, or with a few slices of Iberico ham. Un­be­liev­able value.
