YULE­TIDE COLLINS

If you’ve no in­ter­est in our healthy food sec­tion this week, you can al­ways make use of this sea­sonal cock­tail recipe for a Yule­tide Collins from Karim Me­hdi, who works at Saba (28 Claren­don St, Dublin 2, sabadublin.com) which in­cludes a home­made cran­berry shrub – no, not a plant to put be­side the poin­set­tia, it’s a soft drink.

In­gre­di­ents

Beefeater gin (40ml) Le­mon juice (20ml) Sloe gin (10ml) Home­made cran­berry shrub (20ml) Soda wa­ter

Method

Take a tall glass filled half way with ice cubes; slowly add in the beefeater gin, le­mon juice, sloe gin and home­made cran­berry shrub. Stir all the in­gre­di­ents to­gether and fin­ish by top­ping up with soda wa­ter.

How to make cran­berry shrub

330g cran­ber­ries 330g gran­u­lated sugar 170ml wa­ter 33ml ap­ple cider vine­gar

Method

In large saucepan, add the first 3 in­gre­di­ents. Bring the mix­ture to boil­ing point, turn down the heat and sim­mer for 20 to 30 min­utes.

Strain the cran­ber­ries out of the syrup and let it cool. Add ap­ple cider vine­gar, then taste to check the sweet and sour bal­ance.
