If you’ve no interest in our healthy food section this week, you can always make use of this seasonal cocktail recipe for a Yuletide Collins from Karim Mehdi, who works at Saba (28 Clarendon St, Dublin 2, sabadublin.com) which includes a homemade cranberry shrub – no, not a plant to put beside the poinsettia, it’s a soft drink.
Beefeater gin (40ml) Lemon juice (20ml) Sloe gin (10ml) Homemade cranberry shrub (20ml) Soda water
Take a tall glass filled half way with ice cubes; slowly add in the beefeater gin, lemon juice, sloe gin and homemade cranberry shrub. Stir all the ingredients together and finish by topping up with soda water.
How to make cranberry shrub
330g cranberries 330g granulated sugar 170ml water 33ml apple cider vinegar
In large saucepan, add the first 3 ingredients. Bring the mixture to boiling point, turn down the heat and simmer for 20 to 30 minutes.
Strain the cranberries out of the syrup and let it cool. Add apple cider vinegar, then taste to check the sweet and sour balance.
