The pas­tries can be frozen. In this case, re­move them from the oven 5-7 min­utes be­fore bak­ing is fin­ished and freeze them. When you want to serve the pas­tries, de­frost them in the fridge and, when ready, place them in the oven for the re­main­ing 5-7 min­utes. This way the pas­tries will stay fresh.
