A tri­umph of choco­late

In the cui­sine served at Enoteca Pin­chiorri, ’choco­late’ is by no means a generic, catch-all term. In the recipe gen­er­ously shared by mas­ter pas­try chef Luca La­calamita, the star player is a Chuao Amedei, one of the 13 va­ri­eties fea­tured on the list of Amedei, a renowned Tus­can com­pany that has achieved cult-like sta­tus among top chefs thanks to its painstak­ing at­ten­tion to the many stages in­volved in the man­u­fac­tur­ing process. Its owner Ce­cilia Tessieri, the first fe­male maître choco­latier’ in the world, seeks out the best plan­ta­tions and the most au­then­tic ‘Cru’. The su­perla­tive qual­ity of her choco­late – from ‘bean to bar’ – has made the com­pany a six-time win­ner of the Academy of Choco­late’s Golden Bean Award. Her Chuao, boast­ing the fresh, del­i­cate aroma of co­coa and red berries, pairs per­fectly with the pun­gent notes of olive oil and the slight acid­ity of blue­ber­ries, prefer­ably from Garfag­nana.
