A din­ner in Par­adise at a gourmet restau­rant where metic­u­lous at­ten­tion is paid to ev­ery de­tail and where lo­cally sourced in­gre­di­ents are up­graded with an in­no­va­tive twist by its chef. ro­man­tic, gourmet restau­rant lo­cated in Pra­iano, in the heart of the Amalfi coast, be­tween Amalfi and Positano. A min­i­mal­ist, de­sign restau­rant, em­bel­lished by the Mu­rano glass sculp­tures of Cuban artist Sosa. Sit­u­ated on the fourth floor of the Casa An­gelina Ho­tel, “Un Pi­ano nel Cielo” fea­tures a dining room with large win­dows boasting a mag­nif­i­cent view over the sea and a panoramic ter­race with teak floor­ing. No de­tail has been left to chance, from the choice of ce­ram­ics in which the food is served to the cut­lery. Hos­pi­tal­ity is a key fea­ture of the restau­rant: guests are of­fered an an­tipasto that dif­fers ev­ery evening, ac­com­pa­nied by a cham­pagne, ei­ther of the rosè or brut va­ri­ety, spe­cially pro­duced for the restau­rant by French pro­ducer and vint­ner Pierre Mignon. At the end of the meal, din­ers are of­fered a choco­late- tast­ing experiencing. The choco­late on of­fer is pro­duced by Gobino, a Turin- based com­pany, renowned for it 4.5 kilo gi­an­duiotto and its cre­mone, a gi­gan­tic cream- filled choco­late, and Tus­can choco­latier Slitti, which de­lights din­ers palates with three dif­fer­ent types of 100% co­coa choco­lates. The in­gre­di­ents used to pre­pare the dishes are all lo­cal, up­graded with an in­no­va­tive twist by chef Vin­cenzo Vana­core, a na­tive of Vico Equense, who adapts them to suit the gourmet style of the restau­rant. Par­tic­u­larly wor­thy of note is his ‘ Neapolitan sushi’, a sort of Spaghetti Aglio, Olio e, Peper­on­cino ( Spaghetti with Gar­lic, Oil and Chili Pep­per) cut like rice and sea­soned with red sushi- style tuna. It is one of the restau­rant’s most popular dishes. The culi­nary of­fer is as­tutely rounded off by a cel­lar boasting more than 400 la­bels, in­clud­ing a se­lec­tion of lo­cal, na­tional and for­eign wines. Restau­rant Manager Gen­naro Ca­iazzo.
