The story of Pizzeria Vesuvio began with Nonna Concettina who sold fried pizza with bacon bits and ricotta in piazza Mercato in Naples. Real street food, served with a glass of marsala, she allowed people to pay for the pizza up to eight days after it had been purchased. Nonna Concettina was Luigi Petrone’s first teacher. From the time that he was a little boy, he admired the loving care with which his grandmother kneaded the dough. Luigi helped her to prepare it. At the age of twelve he began working as an errand boy at various pizzerias in Naples where he learnt the secrets of the best pizza chefs in town. In 1989, he realized that he wanted to become a pizza chef and began studying to make his dream come true. In 2002, he founded Pizzeria Vesuvio, in Portici, but only as a takeaway service. He never stopped studying and in 2006 he transformed his takeaway service into a real pizzeria with 110 seats and 2 ovens, one for takeaways and the other for the dining room. His brother Pasquale joined him on his adventure. Luigi’s secret lies in using natural, fresh ingredients, sourced from Campania (including San Marzano tomatoes and Provala and Fior di latte cheese from the Lattari Mountains) and in his preparation of the dough which does not include the use of brewer’s yeast: the dough is stored in a dry place for several hours so that it rises naturally until it becomes light and fluffy.
