The story of Pizze­ria Ve­su­vio be­gan with Nonna Con­cettina who sold fried pizza with ba­con bits and ri­cotta in pi­azza Mer­cato in Naples. Real street food, served with a glass of marsala, she al­lowed peo­ple to pay for the pizza up to eight days af­ter it had been pur­chased. Nonna Con­cettina was Luigi Petrone’s first teacher. From the time that he was a lit­tle boy, he ad­mired the lov­ing care with which his grand­mother kneaded the dough. Luigi helped her to pre­pare it. At the age of twelve he be­gan work­ing as an er­rand boy at var­i­ous pizze­rias in Naples where he learnt the se­crets of the best pizza chefs in town. In 1989, he re­al­ized that he wanted to be­come a pizza chef and be­gan study­ing to make his dream come true. In 2002, he founded Pizze­ria Ve­su­vio, in Por­tici, but only as a take­away ser­vice. He never stopped study­ing and in 2006 he trans­formed his take­away ser­vice into a real pizze­ria with 110 seats and 2 ovens, one for take­aways and the other for the din­ing room. His brother Pasquale joined him on his ad­ven­ture. Luigi’s se­cret lies in us­ing nat­u­ral, fresh in­gre­di­ents, sourced from Cam­pa­nia (in­clud­ing San Marzano toma­toes and Provala and Fior di latte cheese from the Lat­tari Moun­tains) and in his prepa­ra­tion of the dough which does not in­clude the use of brewer’s yeast: the dough is stored in a dry place for sev­eral hours so that it rises nat­u­rally un­til it be­comes light and fluffy.
