Sweet corn and ham fritters
1 small can sweet corn, drained 2 cups shredded cooked chicken breast 3 green onions, thinly sliced cup plain flour cup milk 2 eggs, lightly beaten 2tbsp oil Salt Pepper
1. Combine corn, chicken, onion and flour in a bowl. Season with salt and pepper. Add milk and egg. Mix well. 2. Heat oil in a large frying pan over
medium-high heat. Spoon ⁄ cup batter into pan. Spread out to form a flat round. Repeat to make 3 more fritters. Cook for 3 to 4 minutes, each side, or until well browned. 3. Transfer to a plate lined with paper
towel. Cover loosely to keep warm. 4. Repeat with remaining mixture,
adding extra oil if needed.
