Mar­i­nated cau­li­flower and sprout salad

2 ta­ble­spoons lemon juice 1 1/2 ta­ble­spoons ex­tra vir­gin olive oil 1 large tomato, finely diced 1/2 small red onion, thinly sliced 600g cau­li­flower, cut into small flo­rets 1 cup mung bean sprouts, rinsed 200g snow peas, trimmed, thinly sliced 1/2 cup small fresh basil leaves


Whisk lemon juice and oil in a large bowl. Add tomato, onion and cau­li­flower. Sea­son with salt and pep­per. Stand for 1 hour to al­low fla­vors to de­velop. Step 2 Toss sprouts, snow peas and basil to­gether in a serv­ing bowl. Spoon over dress­ing. Serve.
