Marinated cauliflower and sprout salad
2 tablespoons lemon juice 1 1/2 tablespoons extra virgin olive oil 1 large tomato, finely diced 1/2 small red onion, thinly sliced 600g cauliflower, cut into small florets 1 cup mung bean sprouts, rinsed 200g snow peas, trimmed, thinly sliced 1/2 cup small fresh basil leaves
Whisk lemon juice and oil in a large bowl. Add tomato, onion and cauliflower. Season with salt and pepper. Stand for 1 hour to allow flavors to develop. Step 2 Toss sprouts, snow peas and basil together in a serving bowl. Spoon over dressing. Serve.
