POTATO & SPICED MINCED LAMB PIE

When I first came to London I discovered shepherd’s pie, which reminded me of this recipe that my mum used to make for us all. Instead of an equal layer of mince and mashed potato, this uses more mashed potato and sandwiches a thin filling of spiced mince between two layers of it. The mash and mince are seasoned and lightly spiced with the same ingredients, which brings together all the flavours beautifully. This rich dish needs something light and zingy on the side. I like to serve it with Village Tomato Salad, which cuts through it perfectly.
