Rain­bow bites

You’ll need:

1 baguette, thin sliced

2 cups ri­cotta cheese (500g)

1 pun­net of blue­ber­ries

Honey

200g smoked salmon

Small bunch dill

1 cu­cum­ber, thin sliced

1 pun­net of straw­ber­ries, cut in quar­ters

Bal­samic driz­zle

¼ cup hazel­nuts

1 lemon rind, grated

1 pun­net of grape toma­toes

Pesto

To make:

1 Toast small slices of the baguette un­til golden.

2 Spread ri­cotta cheese on each piece.

3 Com­bine top­pings as fol­lows: Blue­ber­ries and honey, smoked salmon and dill, cu­cum­ber and dill, straw­ber­ries and bal­samic, hazel­nuts with honey, lemon rind, and toma­toes and pesto. Serve.
