On to the mains: The ten­der po­tato and fontina cheese tortellini with sautéed es­car­got and spinach is an in­stant favourite. Those who love to ex­per­i­ment with tex­tures will en­joy slow-cooked Dor­per lamb shoul­der and rack, grilled to per­fec­tion and served with fragrant pars­ley mashed pota­toes, or even seafood bouil­l­abaisse with crusty baguette and Rouille.
