On to the mains: The tender potato and fontina cheese tortellini with sautéed escargot and spinach is an instant favourite. Those who love to experiment with textures will enjoy slow-cooked Dorper lamb shoulder and rack, grilled to perfection and served with fragrant parsley mashed potatoes, or even seafood bouillabaisse with crusty baguette and Rouille.
