The chef-cum-owner and founder of Mo­mo­fuku Milk Bar talks to BAZAAR. Tell us about Mo­mo­fuku Milk Bar. Mo­mo­fuku Milk Bar is a bak­ery-in­spired dessert branch of David Chang’s fa­mous Mo­mo­fuku restau­rant group. It fo­cuses on putting a play­ful Amer­i­can spin on home-style desserts. What is your dessert phi­los­o­phy? Have a point of view, make sure it’s clear, and make sure that dessert is the most de­li­cious thing you’ve tasted. Do you take in­spi­ra­tion from child­hood mem­o­ries? Flavour and emo­tional mem­ory are one and the same for me. They are more poignant and pow­er­ful when com­bined and tapped into via a dish or a dessert. Have you ever had flavour com­bi­na­tions that you were sur­prised worked well? Straw­ber­ries, cel­ery root, lo­vage, and Ritz crack­ers! It’s a to­tal flavour sur­prise and it makes com­plete sense while you’re eat­ing it. Big­gest re­gret? I think my big­gest heart­break was when I just couldn’t get an Amer­i­can cheese­cake/pie with a sal­tine cracker crust and green tomato sor­bet to work in my favour. Which dessert is your favourite? I’m re­ally ob­sessed with cookie dough. It’s what I eat af­ter a long day, and noth­ing else can re­place it! How do you cre­ate new items on the menu? The menu-de­vel­op­ment/recipe-test­ing phase is al­ways a long and wind­ing road. We’re con­stantly work­ing on new items, new flavour com­bi­na­tions, and new tech­niques. But un­til they’re fi­nal, they’re still sub­ject to be­ing cut! How would you de­scribe your de­sign aes­thetic? I’m old-school Amer­i­can baker meets junk foodie meets fancy-trained pastry chef. Tell us about your col­lab­o­ra­tion with Kar­lie Kloss. I am be­yond ex­cited about ex­pand­ing our fash­ion­ably whole­some line of Kar­lie’s Kook­ies with Kar­lie Kloss and rais­ing money for those in need. And your lat­est project? The thing is I never have just one. I love to load my plate, to be in just over my head. I’m ex­cited about writ­ing an­other cook­book, Milk Bar Life, which will be out later this year.
