A tantalising glass of Yzaguirre vermouth perfectly complements an order of anchovies (I went to a supplier in Spain and fought tooth and nail with him just to bring these exquisite anchovies into Kuala Lumpur). Montenovo, paired with ocean-fresh scallops and Iberico pork belly is an experience in itself. The fat from the pork belly melts onto the scallops giving them an interesting flavour. The 100% Godello grape wine is a mineral and salty wine that has a hint of acidity to help counter the fat of the belly. A bottle of San Vicente 2009 enhances the rich flavours of a 14-hour slow-cooked Iberico suckling pig, one of our classic and a favourite of our regulars. The ripe fruit wine goes incredibly well with the delectable flavours of the suckling pig.
