A tan­ta­lis­ing glass of Yza­guirre ver­mouth per­fectly com­ple­ments an or­der of an­chovies (I went to a sup­plier in Spain and fought tooth and nail with him just to bring th­ese ex­quis­ite an­chovies into Kuala Lumpur). Mon­tenovo, paired with ocean-fresh scal­lops and Iberico pork belly is an ex­pe­ri­ence in it­self. The fat from the pork belly melts onto the scal­lops giv­ing them an in­ter­est­ing flavour. The 100% Godello grape wine is a min­eral and salty wine that has a hint of acid­ity to help counter the fat of the belly. A bot­tle of San Vi­cente 2009 en­hances the rich flavours of a 14-hour slow-cooked Iberico suck­ling pig, one of our clas­sic and a favourite of our reg­u­lars. The ripe fruit wine goes in­cred­i­bly well with the de­lec­ta­ble flavours of the suck­ling pig.
