THE SURF LODGE RESTAURANT, MONTAUK How his wine journey began ... Growing up in South Africa, my father had a restaurant. My siblings and I used to go there when we were children and be exposed to new flavours. He would also take us to the market and allow us

the occasional small tastes of wine. Why he loves what he does ... The wine industry is essentially all about the senses, especially taste and smell. Since I first joined the industry five years ago, I realised that this is an endeavour that I always want to be a part of. I love the idea of making something out of nature and then taking the outcome to various parts of the world. There’s so much excitement in that.

How to maximise a sip ... The taste of wine depends on who you’re drinking

with and the situation you’re in – food-centred gatherings in the company of good conversations. So, my suggestion to you: Sauvignon Blanc in the hot sun, on a boat, in the Marlborough Sounds. If his favourite wine were translated into fashion ... The movie Dior and I by Raf Simons! The romantic notes of Pinot Noir would reflect its classicism. The best Cloudy Bay choice to

woo a woman ... I’ve never gone wrong with a glass of

Sauvignon Blanc.
