Get your fill of lob­ster at this cel­e­brated restau­rant.

What do you get when a group of friends get to­gether and dis­cuss a novel and an epony­mous menu that spe­cialises in only two items, from com­pletely dif­fer­ent ends of the spec­trum? A restau­rant chain that has food afi­ciona­dos sali­vat­ing all over the globe, that’s what – and a story that is now be­ing re-told on our shores.

The Set­ting

Lo­cated at Sky Av­enue in Gent­ing, its warm and invit­ing in­te­rior beck­ons to the nos­tal­gia of yesteryears with dark shades of old oak il­lu­mi­nated by warm low lights – a par­tic­u­lar wall is dec­o­rated with 104 tra­di­tional lob­ster crates. While wait­ers decked in black and white hus­tle and bus­tle, you’ll be cosy­ing up in booths that sport plush red seats and tap­ping your foot to retro tunes from the likes of Dusty Springfield.

Fresh From The Ocean...

650 to 700 grammes of lob­ster is de­liv­ered weekly to Gent­ing, straight from the azure wa­ters of Nova Sco­tia, Canada. And make no mis­take, they are still alive and well – with frozen in­gre­di­ents dubbed a blas­phemy in their kitchen. Why Nova Sco­tia, I ask. “Firstly, it’s for the de­li­cious and ten­der qual­ity of the meat. Sec­ondly, be­tween all of our other fran­chises, we are or­der­ing up to 40,000 lob­sters a week and it’s the only place in the world that can de­liver that quan­tity con­sis­tently,” replies Fabrizio Lippi, the gen­eral man­ager.

... Onto Your Plates

It's not just all boun­ti­ful of­fer­ings from the sea as I dig into the suc­cu­lent Aus­tralian beef burger pat­ties – all served with a side of shoe­string fries and salad. The purist gas­tronomist will err on The Orig­i­nal side with pickles, onions, cheese, and lash­ings of B&L’s sweet and tan­ta­lis­ing se­cret sauce. Those look­ing for a more whim­si­cal af­fair would do well to bite into their juicy B&L Burger – the smat­ter­ing of lob­ster meat paired with their tar­ragon and truf­fle sauce will pro­duce a sing-song of flavours.

But the team’s ded­i­ca­tion to el­e­vat­ing your din­ing ex­pe­ri­ence goes far be­yond the ex­act­ing stan­dards of their meat. Just or­der any one of the lob­ster rolls to fully ap­pre­ci­ate their soft sig­na­ture brioche with a but­tery crisp top. As with any other Orig­i­nal item or­dered off the menu, The Orig­i­nal roll comes with their di­vine lemon and gar­lic but­ter sauce – sump­tu­ous when paired with ten­der sliv­ers of lob­ster meat tossed in a solid base of Ja­panese mayo. Mean­while, stronger palates will bet­ter ap­pre­ci­ate the more ro­bust seven spices sauce in the Seven Sa­mu­rai Roll.

Pol­ish­ing off ev­ery de­lec­ta­ble crumb, it was time to savour the star: the chilli lob­ster. If it rings a bell, you’ll be chuffed to know that it was cre­ated for our Malaysian taste buds. Served in a clay­pot with brioche, it’s best to eat it pip­ing hot as the meat can turn a lit­tle chewy due to the way it’s cooked. None­the­less, it doesn’t put a dent in our score­card as Burger & Lob­ster’s ren­di­tion of our well-loved pi­quant sauce is truly ex­quis­ite. But to re­ally ex­pe­ri­ence this es­tab­lish­ment at its peak, we can­not rec­om­mend enough The Orig­i­nal wild live lob­ster – grilled or steamed with ei­ther clar­i­fied but­ter, or lemon-and-gar­lic but­ter. The for­mer has lay­ers of smoky depth to the meat, while the lat­ter is ab­so­lutely creamy and just stun­ning all around.
