Gar­ner­ing at­ten­tion all over the world for its whim­si­cal abil­ity to change colour (through the ma­nip­u­la­tion of pH lev­els), the but­ter­fly pea flower – bunga te­lang – has long been used in South­east Asia to colour sticky rice. Lend­ing a beau­ti­ful shade of blue es­pe­cially to drinks, it can also turn pur­ple and pink – mak­ing it one of the most ex­cit­ing in­gre­di­ents to play around with in the kitchen.
