But­ter­fly pea flower pop­si­cles

Brew some deep blue tea, or add the pow­der to co­conut wa­ter and honey for a tastier con­coc­tion. Sep­a­rate the liq­uid into three bowls – squeeze some lemon juice into the sec­ond and more into the third. Pour your first bowl into the ice cream moulds – fill­ing them only half­way – and place them in the freezer. Once semi-frozen, add on an­other layer from the sec­ond bowl to cre­ate an om­bre ef­fect, be­fore top­ping them all off with the liq­uid from the third bowl. In be­tween lay­er­ing, add fresh but­ter­fly pea flow­ers (push­ing them down with a chop­stick) – the semi-frozen con­sis­tency will en­sure they are uni­formly dis­trib­uted. All you’ll have to do is brew some blue tea and pop them into the freezer to turn them into ice cubes. Just add them to a glass of le­mon­ade and watch as your drink slowly turns colour.
