Cos let­tuce WITH BU T T ER MILK DR E SSING

IN­GRE­DI­ENTS:

• 3 baby cos let­tuce, split into 4 length­ways, washed and drained

• Grated Parme­san, to serve

Dress­ing:

• 1 cup but­ter­milk • ½ cup may­on­naise • ½ le­mon, juice only • 1 tsp smoked paprika, ex­tra for gar­nish­ing • 1 tsp Di­jon mus­tard • ½ tsp salt • Black pep­per, to taste • 1 tsp chives, chopped

METHOD:

1. In a medium bowl, whisk to­gether the but­ter­milk and may­on­naise. 2. Add the re­main­ing dress­ing in­gre­di­ents and sea­son to taste. Lay the cos on a plate, cut side fac­ing up. 3. Spoon the dress­ing over, grate some Parme­san, and serve im­me­di­ately.
