Grilled Wholemeal Fajita Burger

120g chicken breast 1 tsp black pepper A pinch of salt 50g tomato 50g Japanese cucumber 10g shallots 10g red capsicum 1 tsp canola oil 1 wholemeal tortilla 50g ripe avocado
1. In a bowl, marinade chicken breast with black pepper and salt. Mix well. Place shallots and capsicum on the center of an aluminum foil; sprinkle with canola oil. Fold over aluminum foil to cover all ingredients. 2. Roast vegetables and chicken over a grill, on low heat, for about 10 to 13 minutes or until 73.8°C and vegetables are soft. 3. Serve roasted chicken on a tortilla with vegetables and avocado.
