Japanese Peruvian food is the order of the day here and that means sashimi with jalepeno chillies, ceviches with yuzu et al. You may be sorely tempted otherwise but the way to get the most out of your Nobu experience is to dine communal style, and dare we say it—share.

• Nobu’s new style sashimi are a must-try, especially for initiates. Essentiall­y raw fish singed with hot flavoured oil, we like the scallop version for its beautiful plump texture.

• The squid “pasta” with garlic sauce is so called because the squid is beautifull­y cut and resembles al dente pasta in texture than the chewy variety you find elsewhere.
