Fish, such as tuna of a more than ad­e­quate fat­ti­ness and salmon that is truly suc­cu­lent, are sup­ple­mented by a sprin­kling of sea urchin and crowned with an oys­ter. For those who like their food warm and cooked, the tem­pura also of­fers some mo­ri­awase treats that are light and crisp; they are not greasy and cer­tainly not bland.
