In this mod­ern in­ter­pre­ta­tion of a tra­di­tional Chi­nese man­sion, par­take in ex­quis­ite del­i­ca­cies na­tive to Shunde, in the Chi­nese prov­ince of Guangzhou.


The stir-fried Aus­tralian as­para­gus and lo­tus root with wax meat and squid cake is a sump­tu­ous dish. The as­para­gus and lo­tus root slices are crunchy and con­trast well with the chewy tex­tures of the wax meat and squid cake.

The baked Scot­land clam with creamed spinach is an­other favourite. The clams are soft and ten­der and the cheesy and creamy spinach top­ping fin­ishes the dish per­fectly.

The liver sausage in ‘ char siew’ roll comes highly rec­om­mended. Soft and but­tery pieces of liver sausage are wrapped del­i­cately in a pork roll and then grilled to a nice crisp char. The sweet­ness from the bar­be­cue sauce on the char siew roll is a won­der­ful com­ple­ment to the savoury liver sausage.
