Any­thing over 21 days is con­sid­ered “heav­ily aged”. By now, the beef will have lost about 18% of its mois­ture. As it dries, the outer layer be­comes jerky-like (and not in a good way), so needs to be cut away, leav­ing the ten­der flesh be­hind.
