SERVES 4- 6 • Smoked pa­prika, 1tbsp Cayenne pow­der, 1tbsp • Chilli flakes, 1tbsp • Onion pow­der, 1tsp • Six-month beef, 2.5kg • A red onion, in wedges • Gar­lic bulb, smashed • Rose­mary, 2 sprigs • Thyme, 2 sprigs • Sweet pota­toes, 2 • METHOD Take the rib out of the fridge an hour be­fore cook­ing. Place a dish in a 240°C oven. Rub the meat with your spices, then put it in the heated dish with the other in­gre­di­ents. Roast for 15 min­utes, then dial down to 160°C and cook for 2½ hours. Baste the beef with its juices as it cooks. Re­move and cover with foil for 30 min­utes. Well, what’s an­other half hour?
