He will work on tra­di­tional Malay cook­ing en­cy­clopae­dia with var­sity

CELEBRITY chef Datuk Redzuawan Is­mail, bet­ter known as Chef Wan, will work with Univer­siti Utara Malaysia (UUM) to pro­duce an en­cy­clopae­dia on tra­di­tional Malay cook­ing.

The book will be part of many pro­grammes that the univer­sity planned to or­gan­ise with Chef Wan, who has been ap­pointed as ad­junct pro­fes­sor with UUM School of Tourism, Hos­pi­tal­ity and En­vi­ron­men­tal Man­age­ment (STHEM).

The two-year ap­point­ment will see him giv­ing talks and classes to stu­dents and lec­tur­ers at STHEM.

UUM Vice-Chan­cel­lor Pro­fes­sor Datuk Seri Dr Mo­hamed Mustafa Ishak said the univer­sity ap­pointed Chef Wan to boost the school’s aca­demic ex­cel­lence.

“We hope to ven­ture into busi­ness and launch our Man­ager’s Cof­fee Café.

“The ap­point­ment of Chef Wan will set us on the right path,” he said, after UUM’s 33rd An­niver­sary Cel­e­bra­tion and the launch of the café at Sul­tanah Bahiyah Li­brary here yes­ter­day.

Present was UUM chair­man Tan Sri Siti Sa’adiah Sheikh Bakir.

Siti Sa’adiah pre­sented a gift to Ja­pan Foun­da­tion di­rec­tor Horikawa Koichi, who was named UUM’s One Mil­lionth Vis­i­tor dur­ing the Dis­cover UUM event last year.

Chef Wan said he ac­cepted the ap­point­ment as it was a way for him to share his knowl­edge and ex­pe­ri­ence with as­pir­ing chefs at STHEM.

“I was of­fered the po­si­tion by two other uni­ver­si­ties, but I chose to come to UUM be­cause I see the po­ten­tial in this univer­sity.

“I also be­lieve that UUM can pro­vide aca­demic in­put for the en­cy­clo­pe­dia that I wish to pub­lish, us­ing ma­te­ri­als that I have amassed in over 25 years in the in­dus­try,” he said.

He said he was ea­ger to share his knowl­edge with lec­tur­ers and stu­dents at UUM and be­lieved that they would ben­e­fit from his ex­pe­ri­ence.

The 59-year-old chef re­ceived his pro­fes­sional training in ho­tel man­age­ment from Cal­i­for­nia Culi­nary Academy and a Ritz Es­coffier Diploma from Hô­tel Ritz Paris.

He was in­volved in var­i­ous lo­cal and in­ter­na­tional cook­ing shows, in­clud­ing Kuali and Mar­ket Kitchen by UK Food Net­work.
