CHEF WAN TO TEACH AT UUM
He will work on traditional Malay cooking encyclopaedia with varsity
CELEBRITY chef Datuk Redzuawan Ismail, better known as Chef Wan, will work with Universiti Utara Malaysia (UUM) to produce an encyclopaedia on traditional Malay cooking.
The book will be part of many programmes that the university planned to organise with Chef Wan, who has been appointed as adjunct professor with UUM School of Tourism, Hospitality and Environmental Management (STHEM).
The two-year appointment will see him giving talks and classes to students and lecturers at STHEM.
UUM Vice-Chancellor Professor Datuk Seri Dr Mohamed Mustafa Ishak said the university appointed Chef Wan to boost the school’s academic excellence.
“We hope to venture into business and launch our Manager’s Coffee Café.
“The appointment of Chef Wan will set us on the right path,” he said, after UUM’s 33rd Anniversary Celebration and the launch of the café at Sultanah Bahiyah Library here yesterday.
Present was UUM chairman Tan Sri Siti Sa’adiah Sheikh Bakir.
Siti Sa’adiah presented a gift to Japan Foundation director Horikawa Koichi, who was named UUM’s One Millionth Visitor during the Discover UUM event last year.
Chef Wan said he accepted the appointment as it was a way for him to share his knowledge and experience with aspiring chefs at STHEM.
“I was offered the position by two other universities, but I chose to come to UUM because I see the potential in this university.
“I also believe that UUM can provide academic input for the encyclopedia that I wish to publish, using materials that I have amassed in over 25 years in the industry,” he said.
He said he was eager to share his knowledge with lecturers and students at UUM and believed that they would benefit from his experience.
The 59-year-old chef received his professional training in hotel management from California Culinary Academy and a Ritz Escoffier Diploma from Hôtel Ritz Paris.
He was involved in various local and international cooking shows, including Kuali and Market Kitchen by UK Food Network.
