MUSH­ROOM BRUSCHETTA

IN­GRE­DI­ENTS ( serves four) 100g fresh mush­rooms

20g fresh thyme

10g chopped gar­lic

30g un­salted but­ter

30g olive oil

20g lemon juice

20g sweet basil leaves 5 slices French loaf

METHOD

1. Heat olive oil in a sauce pan.

2. Add mush­rooms and cook for eight min­utes un­til they change colour.

Add chopped gar­lic, thyme and basil leaves and sauté un­til fra­grant.

Sea­son with salt and pep­per.

Grill bread slices over a grill pan and then spread with un­salted but­ter.

Top each piece of the grilled bread with some of the mush­room mix­ture and it is ready to serve.
