INGREDIENTS ( serves four) 100g fresh mushrooms
20g fresh thyme
10g chopped garlic
30g unsalted butter
30g olive oil
20g lemon juice
20g sweet basil leaves 5 slices French loaf
1. Heat olive oil in a sauce pan.
2. Add mushrooms and cook for eight minutes until they change colour.
Add chopped garlic, thyme and basil leaves and sauté until fragrant.
Season with salt and pepper.
Grill bread slices over a grill pan and then spread with unsalted butter.
Top each piece of the grilled bread with some of the mushroom mixture and it is ready to serve.
