Cur­ried Sweet Potato Mango Dip

Start to fin­ish: 5 min­utes

2 sweet po­ta­toes, roasted and peeled

1⁄2 cup diced mango

3 ta­ble­spoons red or yel­low curry paste

2 ta­ble­spoons ex­tra-vir­gin olive oil

1 ta­ble­spoon lime juice

1 ta­ble­spoon maple syrup

1⁄4 tea­spoon sesame oil

1⁄4 tea­spoon salt

Black sesame seeds, to gar­nish.

Blend the first 8 in­gre­di­ents in a food pro­ces­sor. Trans­fer dip to serv­ing bowl and gar­nish with black sesame seeds.

Serves 8.
