Cook­ing is re­ally about fil­ter­ing in­for­ma­tion from the out­side and trans­form­ing it into some­thing de­li­cious, so it is im­pos­si­ble to re­main com­pletely un­in­flu­enced – but I still try to avoid read­ing lists, other mod­ern chef’s cook­books or watch­ing cook­ing shows on tele­vi­sion.

For us, find­ing in­spi­ra­tion is like breath­ing; it is ef­fort­less. The world is an in­cred­i­ble place and, ev­ery day, we are bom­barded with so much great ma­te­rial to work with.
