Steve Earl is a firm be­liever in re­spect­ing the craft of cook­ing and the in­gre­di­ents he uses to make the dishes he serves his cus­tomers. At La Bimba, Earl’s restau­rant lo­cated in Apollo Bay along the Great Ocean Road in Mel­bourne, all the live­stock and pro­duce used are eth­i­cally and sus­tain­ably sourced, which means cus­tomers get a dif­fer­ent ex­pe­ri­ence ev­ery time they dine in. One of the ways La Bimba stays sus­tain­able is by util­is­ing by­catches, un­in­ten­tion­ally caught marine life, in the daily menu, which al­le­vi­ates the bur­den on fish­er­man by di­ver­si­fy­ing in­come and min­imis­ing waste, while giv­ing cus­tomers an evolv­ing daily menu that al­ways uses the fresh­est in­gre­di­ents on of­fer. Earl be­lieves in show­cas­ing re­gional flavours as a way to ed­u­cate guests on eat­ing sus­tain­ably and fully ap­pre­ci­at­ing sea­sonal of­fer­ings at the right time.
