Weather the hot spell with sim­ple to pre­pare dessert soups.

WITH the weather be­ing so hot and all, it’d be a good idea to have a bowl of dessert to cool us down. These recipes for dessert soups are sim­ple to pre­pare and yet the taste is fab­u­lous.

Pear and Ap­ple Soup

½ red Fuji ap­ple ½ Granny Smith ap­ple ½ Korean pear 5 dried figs 8 dried red dates, seeded and cut into thin slices 125g rock sugar 1.2 litres wa­ter 5-6 slices le­mon Re­move core from ap­ples and pear. Keep skin in­tact and cut into thin long strips. Dice the pear. Com­bine figs, dates and wa­ter in a saucepan. Bring to a boil for 10 min­utes. Re­duce the heat and add the fruits and rock sugar. Sim­mer for 20-25 min­utes or un­til fruits are soft. Add le­mon slices. Serve warm.
