Recipes for Caramelised Pork Chops and Sweet Corn Muffins.

Sweet corn muffins are de­li­cious and make a lovely snack. Clean pork, then pat-dry with paper kitchen tow­els. Rub both sides of pork with sugar, salt and pep­per.

Heat olive oil in non­stick fry­ing pan. Cook pork slices over medium-high heat for 1 minute each side or un­til golden and caramelised. Re­duce heat and cook for 2-3 min­utes each side or un­til cooked through.

Trans­fer pork to a serv­ing plate and leave for 5-6 min­utes. Serve with dress­ing.

To pre­pare bal­samic dress­ing: Com­bine olive oil, bal­samic vine­gar and mus­tard in a screw­top jar. Add a pinch of salt and a dash of pep­per.

Sweet Corn Muffins

250g self-rais­ing flour 1 tsp bak­ing pow­der 80g grated ched­dar cheese 125g cas­tor sugar 130g canned cream-style corn 2 eggs, lightly beaten 80g melted but­ter 1 tsp vanilla essence 225 ml milk 1/8 tsp salt

Grease a 12 hole muf­fin pan. Pre­heat oven to 190°C.

Place sifted flour and bak­ing pow­der in a large mix­ing bowl. Add grated cheese and sugar to mix.

Stir in melted but­ter, essence and salt. Grad­u­ally pour in milk and add in beaten eggs.

Add the corn and mix into a bat­ter. Spoon mix­ture into pre­pared pan and bake for about 20-25 min­utes or un­til well risen. WHERE can I buy sesame paste? Can I make it at home? – Canny Chan Sesame paste is avail­able in spe­cial­ist cake shops. You can also do it your­self. Toast sesame seeds, then grind them in a food pro­ces­sor un­til it be­comes a fine paste.

Pork chops can be made health­ier by cook­ing them in olive oil. The Ba­nana Cheese Frit­ters are a win­ner at the Salero Mande res­tau­rant.
