There’s a lot to eat in KL and, with so much to choose from, it’s a shame to con­fine your­self to just one dish. That’s why shared din­ing is so deeply sat­is­fy­ing: Every­body gets to try some­thing dif­fer­ent. The Time Out team checks out five restau­rants that

Fuego

This art­ful restau­rant and bar is part of the Troika Sky Din­ing em­pire, the en­ter­pris­ing, sleek yet ut­terly cheer­ful col­lec­tion of F&B ven­tures by Ed­die Chew and Christian Bauer.

Named after the Span­ish word for ‘fire’, Fuego ex­plores South Amer­i­can flavours and does so with a great sense of the­atre. This is ev­i­dent in dishes such as the smoked snails in a jar (RM30), grilled wa­ter­melon with fried haloumi (RM30), smoked quail eggs (RM25) and salted cod roe cro­quettes (RM40). Smoking is a heav­ily used tech­nique here, and man­ager Rick Joore ac­knowl­edges Fuego’s bias to­wards flamed, grilled and smoked tones. The chaos is di­alled down in the mains, in which large slabs of grilled beef cuts or chicken are thrown onto wooden boards next to minia­ture jars of sauces. For dessert, churros with dulce de leche are ever so present on the menu. This is food for shar­ing, per­fect in be­tween sips of cock­tails and lively con­ver­sa­tions.

It’s also worth men­tion­ing that Fuego em­ploys a whole team of gua­camole chefs – se­ri­ous white-jack­eted blokes

who make gua­camole all night. It’s not sur­pris­ing then that the gua­camole en­tries alone take the hum­ble av­o­cado to rock star lev­els. Be­sides the clas­sic it­er­a­tion, there’s one with sal­mon roe (RM25), a spicy ver­sion with cili padi (RM20), and a favourite of ours: gua­camole with an­chovies, sundried toma­toes and pre­served le­mons (RM25).

Fuego’s clincher is un­doubt­edly the space in which it sits. A sky-high floor of a KL build­ing never be­fore pro­vided a view of the Tow­ers as re­splen­dent as this one – whether at sun­set or after hours, the view is a sparkling panorama. Mean­while, none of the grandios­ity of Can­taloupe or Claret Wine Bar is present at Fuego; it’s a wild­card Troika Sky Din­ing project for the ev­ery­man. For proof, soak in the eclec­tic Talav­era-style tiles, breezy al­fresco vibe and ca­sual can­teen-style benches on a week­night.
