Meals to share

There’s a lot to eat in KL and, with so much to choose from, it’s a shame to confine yourself to just one dish. That’s why shared dining is so deeply satisfying: Everybody gets to try something different. The Time Out team checks out five restaurants that

This artful restaurant and bar is part of the Troika Sky Dining empire, the enterprising, sleek yet utterly cheerful collection of F&B ventures by Eddie Chew and Christian Bauer.

Named after the Spanish word for ‘fire’, Fuego explores South American flavours and does so with a great sense of theatre. This is evident in dishes such as the smoked snails in a jar (RM30), grilled watermelon with fried haloumi (RM30), smoked quail eggs (RM25) and salted cod roe croquettes (RM40). Smoking is a heavily used technique here, and manager Rick Joore acknowledges Fuego’s bias towards flamed, grilled and smoked tones. The chaos is dialled down in the mains, in which large slabs of grilled beef cuts or chicken are thrown onto wooden boards next to miniature jars of sauces. For dessert, churros with dulce de leche are ever so present on the menu. This is food for sharing, perfect in between sips of cocktails and lively conversations.

It’s also worth mentioning that Fuego employs a whole team of guacamole chefs – serious white-jacketed blokes

who make guacamole all night. It’s not surprising then that the guacamole entries alone take the humble avocado to rock star levels. Besides the classic iteration, there’s one with salmon roe (RM25), a spicy version with cili padi (RM20), and a favourite of ours: guacamole with anchovies, sundried tomatoes and preserved lemons (RM25).

Fuego’s clincher is undoubtedly the space in which it sits. A sky-high floor of a KL building never before provided a view of the Towers as resplendent as this one – whether at sunset or after hours, the view is a sparkling panorama. Meanwhile, none of the grandiosity of Cantaloupe or Claret Wine Bar is present at Fuego; it’s a wildcard Troika Sky Dining project for the everyman. For proof, soak in the eclectic Talavera-style tiles, breezy alfresco vibe and casual canteen-style benches on a weeknight.
