Situated in The Troika building by the acclaimed architects Foster and Partners, Troika Sky Dining is habitually impressive. The collection of F&B endeavours by the indefatigable duo Eddie Chew and Chris Bauer has been wowing the city with the elegant Cantaloupe, cosy Strato, and sophisticated Claret and now there’s a new venture to add to the fold. Fuego is a Latino bar with a difference. Located outside the main clutch of restaurants, this alfresco bar looks out over the Petronas towers but deftly competes with the view through the fire engine red chairs and muted madness of a Talavera tiled floor that is catholic in its embrace of pattern. Head to the bar where industrial plumbing frames innovative cocktails with a twist, where negronis come secreted within romance novels and mojitos contain rum spiked with lychee and chilli. The food menu too is a thorough trip through Latin inspired tastes: fives kinds of guacamole, four kinds of ceviche, little plates and big plates of fresh and creative dishes, all important parts of a build-your-own South American feast. There is in fact a crack team of guacamole chefs dedicated to mashing out variations on this traditional dip so it’s a musttry here. But whether you snack on smoked quail eggs or soft-shell crab nachos, we absolutely recommend you finish on some of the best churros in the city, soft and spongy within and satisfyingly crunchy on the outside.
