Sit­u­ated in The Troika build­ing by the ac­claimed ar­chi­tects Foster and Part­ners, Troika Sky Din­ing is ha­bit­u­ally im­pres­sive. The col­lec­tion of F&B en­deav­ours by the in­de­fati­ga­ble duo Ed­die Chew and Chris Bauer has been wow­ing the city with the el­e­gant Can­taloupe, cosy Strato, and so­phis­ti­cated Claret and now there’s a new ven­ture to add to the fold. Fuego is a Latino bar with a dif­fer­ence. Lo­cated out­side the main clutch of restau­rants, this al­fresco bar looks out over the Petronas tow­ers but deftly com­petes with the view through the fire en­gine red chairs and muted mad­ness of a Talav­era tiled floor that is catholic in its embrace of pat­tern. Head to the bar where in­dus­trial plumb­ing frames in­no­va­tive cock­tails with a twist, where ne­gro­nis come se­creted within ro­mance nov­els and mo­ji­tos con­tain rum spiked with ly­chee and chilli. The food menu too is a thor­ough trip through Latin in­spired tastes: fives kinds of gua­camole, four kinds of ce­viche, lit­tle plates and big plates of fresh and cre­ative dishes, all im­por­tant parts of a build-your-own South Amer­i­can feast. There is in fact a crack team of gua­camole chefs ded­i­cated to mash­ing out vari­a­tions on this tra­di­tional dip so it’s a must­try here. But whether you snack on smoked quail eggs or soft-shell crab na­chos, we ab­so­lutely rec­om­mend you fin­ish on some of the best churros in the city, soft and spongy within and sat­is­fy­ingly crunchy on the out­side.
