You could cook pretty much any­thing in a tan­door oven, but Delhi Royale takes it a step fur­ther by putting a green, crunchy veg­etable to the test. Broc­coli flo­rets are basted in a spicy masala paste thick­ened with cashew, and low­ered into a tan­door oven till their heads are just over the edge of charred. Have a cool lassi on the side; the heat creeps on to the palate with lit­tle warn­ing.
