Not known to many is that the fresh pro­duce is air-flown from Ja­pan three times a week in or­der to en­sure fresh­ness and qual­ity. Prices here are up­scale but the ex­pe­ri­ence is worth ev­ery penny, since qual­ity and fresh­ness take prece­dence. This is where you can taste the dif­fer­ence be­tween generic Ja­panese ca­sual din­ing restau­rants and Hanaya’s of­fer­ings: the burst of rich, fresh flavour when the tip of your chop­stick hits your tongue and the ro­bust af­ter­taste that lingers once you’ve savoured ev­ery morsel. A se­lec­tion of the best dishes is be­stowed upon the diner, each with a mes­sage of culi­nary ex­per­tise that is au­then­tic to its cul­tural roots. Ev­ery plate is decked with the finest of­fer­ings and if you were pay­ing at­ten­tion at your reg­u­lar sushi joint, you’d no­tice that store-bought wasabi doesn’t blend in well.
