Sam­bal Chilli is the new­est mem­ber of Atria’s squad of restau­rants and it looks like they’re here to stay, thanks to their eclec­ti­cally sea­soned Ny­onya dishes that bring back the nos­tal­gic feel of child­hood favourites. The in­te­rior em­anates a cheer­ful vibe with a light­hearted dé­cor that crafts the sim­ple feel­ing of be­ing com­fort­ably at home which is a great break away from the over­rated in­dus­trial chic look that most eater­ies have been adopt­ing. Tra­di­tional favourites like chicken kap­i­tan curry are a must try: the hours of prepa­ra­tion and overnight mar­i­na­tion bring out the blend of spices that have soaked deep into the meat, which ten­derly falls off the bone when poked with a fork. Another one that shouldn’t be missed is the Inchi Kabin, a Ny­onya clas­sic. The juicy and fresh fried chicken with a crispy skin boasts an ethe­real taste, thanks to the har­mo­nious blend of lemon­grass, co­rian­der, cumin, ginger and black pep­per that coats the skin and brings a burst of flavour. Com­plete the ex­pe­ri­ence with banana frit­ters: they’re fried upon or­der and served with vanilla ice-cream or dipped in ki­cap chilli for an added zing.
