Kuala Lumpur’s bur­geon­ing fine din­ing scene is on the as­cent. Din­ers are be­com­ing more dis­cern­ing and cu­ri­ous palates are al­ways on the look­out for novel tastes and in­no­va­tive menu com­bi­na­tions. Can­taloupe at Troika Sky Din­ing’s rep­u­ta­tion as a mod­ern Euro­pean din­ing es­tab­lish­ment pre­cedes it and its menus are a com­bi­na­tion of ex­cep­tional in­gre­di­ents, in­tu­itive cook­ing and the abil­ity to in­trigue the diner. As the flag­ship restau­rant of the Troika Sky Din­ing in­sti­tu­tion, Can­taloupe is a feast for the senses with its in­tri­cately planned interiors – in a dis­tinct shade of teal blue that has be­come the sig­na­ture colour of the brand – to a stun­ning view of the iconic Twin Towers, dis­cern­able ser­vice and well-crafted dishes.

In­gre­di­ents are ob­vi­ously the foun­da­tion of any dish with qual­ity tak­ing prece­dence over quan­tity. At­ten­tion to de­tail is of the ut­most im­por­tance, which is why Can­taloupe’s menu fo­cuses on util­is­ing fewer in­gre­di­ents while cre­at­ing more in­tense flavours. There are over 20 ex­quis­ite dishes to try, each a clas­sic unto its own but with some cheeky twists. Ex­ec­u­tive Chef Chris­tian Bauer, had this to say, “Our menu is con­stantly evolv­ing. We al­ways add or take away in­gre­di­ents to fine-tune a dish and we’re work­ing to­wards dishes with fewer in­gre­di­ents but to play with more flavours from those in­gre­di­ents.”

In­spi­ra­tion can come from things like the rich­ness of a brioche, which then leads to a pan-roasted foie gras and egg mol­let. The menu of­fers dishes cre­ated with in­gre­di­ents like the dense flesh of the monk­fish to del­i­cate An­jou pi­geon and flaw­lessly poached oys­ters to briny Aus­tralian scampi. Din­ers are en­cour­aged to cu­rate their own four-, six- or eight-course meal – each course be­ing part of a gas­tro­nomic jour­ney. After all you don’t come to Can­taloupe to eat; you come to feast on ex­cep­tional flavours with the city’s iconic sky­line laid out be­fore you.
