Cantaloupe at Troika Sky Dining’s reputation as a modern European dining establishment precedes it and its menus are a combination of exceptional ingredients, intuitive cooking and the ability to intrigue the diner. As the flagship restaurant of the Troika Sky Dining institution, Cantaloupe is a feast for the senses with its intricately planned interiors – in a distinct shade of teal blue that has become the signature colour of the brand – to a stunning view of the iconic Twin Towers, discernable service and well-crafted dishes.
Ingredients are obviously the foundation of any dish with quality taking precedence over quantity. Attention to detail is of the utmost importance, which is why Cantaloupe’s menu focuses on utilising fewer ingredients while creating more intense flavours. There are over 20 exquisite dishes to try, each a classic unto its own but with some cheeky twists. Executive Chef Christian Bauer, had this to say, “Our menu is constantly evolving. We always add or take away ingredients to fine-tune a dish and we’re working towards dishes with fewer ingredients but to play with more flavours from those ingredients.”
Inspiration can come from things like the richness of a brioche, which then leads to a pan-roasted foie gras and egg mollet. The menu offers dishes created with ingredients like the dense flesh of the monkfish to delicate Anjou pigeon and flawlessly poached oysters to briny Australian scampi. Diners are encouraged to curate their own four-, six- or eight-course meal – each course being part of a gastronomic journey. After all you don’t come to Cantaloupe to eat; you come to feast on exceptional flavours with the city’s iconic skyline laid out before you.
