We ask a chef to share a simple recipe to get kids in the kitchen
This recipe is simple and quick to make, looks amazing and most importantly, is very nutritious. An avocado is a nutrient-dense food with nearly 20 vitamins and minerals and contains monounsaturated fat, which is a good fat. This dish comes courtesy of La Juiceria Superfoods and is ideal for a healthy breakfast, brunch or lunch.
INGREDIENTS (serves 2)
• 1 avocado • 1 tablespoon lemon juice (or lime juice) • A pinch of salt • 4 eggs • 4 slices of toast • Salt and pepper to taste • Knob of butter (optional)
1. Mash the avocado, lemon juice and salt together. Ask your little one to help with this! 2. Fry the eggs in a pan over medium heat. Make sure not to overcook so you have a runny yolk. 3. Lightly spread some butter on your toast. (optional) 4. Spread the mashed avocado on a slice of toast, top with a fried egg and season with salt and pepper. 5. If you want to jazz it up add the following options:
• Basil or coriander into the avocado mixture • Jalapeño or hot sauce if you
like it spicy • Bits of bacon or ham on top • Parmesan or your favourite cheese, either sprinkled on top or mixed into the avocado.
