This recipe is sim­ple and quick to make, looks amaz­ing and most im­por­tantly, is very nu­tri­tious. An av­o­cado is a nu­tri­ent-dense food with nearly 20 vi­ta­mins and min­er­als and con­tains mo­noun­sat­u­rated fat, which is a good fat. This dish comes cour­tesy of La Juice­ria Su­per­foods and is ideal for a healthy break­fast, brunch or lunch.

IN­GRE­DI­ENTS (serves 2)

• 1 av­o­cado • 1 ta­ble­spoon le­mon juice (or lime juice) • A pinch of salt • 4 eggs • 4 slices of toast • Salt and pep­per to taste • Knob of but­ter (op­tional)


1. Mash the av­o­cado, le­mon juice and salt to­gether. Ask your lit­tle one to help with this! 2. Fry the eggs in a pan over medium heat. Make sure not to over­cook so you have a runny yolk. 3. Lightly spread some but­ter on your toast. (op­tional) 4. Spread the mashed av­o­cado on a slice of toast, top with a fried egg and sea­son with salt and pep­per. 5. If you want to jazz it up add the fol­low­ing op­tions:

• Basil or co­rian­der into the av­o­cado mix­ture • Jalapeño or hot sauce if you

like it spicy • Bits of ba­con or ham on top • Parme­san or your favourite cheese, ei­ther sprin­kled on top or mixed into the av­o­cado.
