Prep And Cook 50 Min­utes Makes 15

125g olive oil mar­garine

1⁄ 3 cup (75g) firmly packed brown su­gar 2 tb­sps honey 1½ cups (135g) rolled oats ½ cup (75g) self-rais­ing flour ½ cup (65g) sweet­ened, dried cran­ber­ries ½ cup (70g) coarsely chopped, pit­ted dried dates ½ cup (80g) sul­tanas ¼ cup (50g) pump­kin seed ker­nels (pepi­tas) 2 tb­sps se­same seeds 1. Pre­heat oven to 180°C. Grease a 28cm x 18cm (base mea­sure­ment) slice pan and line the base and two long sides with one piece of bak­ing pa­per. 2. Stir mar­garine, su­gar and honey in medium saucepan over medium heat un­til su­gar is dis­solved. Stir in re­main­ing in­gre­di­ents. 3. Press the mix­ture into the pan and smooth the sur­face. Bake for about 35 min­utes or un­til golden. Cool in the pan. Cut into bars.

Not suit­able to freeze. Mar­garine mix­ture suit­able to mi­crowave.

COOK’S NOTE: Muesli bars will keep in an air­tight con­tainer for up to one week.
