HOMEMADE MUESLI BARS
Prep And Cook 50 Minutes Makes 15
125g olive oil margarine
1⁄ 3 cup (75g) firmly packed brown sugar 2 tbsps honey 1½ cups (135g) rolled oats ½ cup (75g) self-raising flour ½ cup (65g) sweetened, dried cranberries ½ cup (70g) coarsely chopped, pitted dried dates ½ cup (80g) sultanas ¼ cup (50g) pumpkin seed kernels (pepitas) 2 tbsps sesame seeds 1. Preheat oven to 180°C. Grease a 28cm x 18cm (base measurement) slice pan and line the base and two long sides with one piece of baking paper. 2. Stir margarine, sugar and honey in medium saucepan over medium heat until sugar is dissolved. Stir in remaining ingredients. 3. Press the mixture into the pan and smooth the surface. Bake for about 35 minutes or until golden. Cool in the pan. Cut into bars.
Not suitable to freeze. Margarine mixture suitable to microwave.
COOK’S NOTE: Muesli bars will keep in an airtight container for up to one week.
