STEAMED BANANA LEAF GLUTINOUS RICE Prep 30 mins | Cook 40 mins | Serves 4
500g glutinous rice, soaked in water
for at least 4 hours or overnight 5 tbsps red rice, rinsed and drained 100ml thick coconut milk 2 tbsps freshly grated ginger 1½ tbsps salt 300ml water 100g fresh corn 8 pieces banana leaves, cut into 6 X 5
inches, blanched in hot water and wiped dry (From banana leaves, cut eight ¾cm- length strips) Rendang or serunding (beef floss) to serve 1. Combine glutinous rice, red rice, coconut milk, ginger, salt and water. Steam the mixture over medium heat for 30 mins, stirring once. 2. Add the fresh corn and mix well. 3. To wrap rice, lightly grease the smooth side of the banana leaf with vegetable oil. Spoon 5 tbsps rice mixture and roll it up firmly. Fold in the sides and secure with banana leaf strips. 4. Steam rice for 40 mins. Allow to cool slightly before serving with rendang or beef floss.
