STEAMED BA­NANA LEAF GLUTI­NOUS RICE Prep 30 mins | Cook 40 mins | Serves 4

500g gluti­nous rice, soaked in wa­ter

for at least 4 hours or overnight 5 tb­sps red rice, rinsed and drained 100ml thick co­conut milk 2 tb­sps freshly grated ginger 1½ tb­sps salt 300ml wa­ter 100g fresh corn 8 pieces ba­nana leaves, cut into 6 X 5

inches, blanched in hot wa­ter and wiped dry (From ba­nana leaves, cut eight ¾cm- length strips) Ren­dang or serund­ing (beef floss) to serve 1. Com­bine gluti­nous rice, red rice, co­conut milk, ginger, salt and wa­ter. Steam the mix­ture over medium heat for 30 mins, stir­ring once. 2. Add the fresh corn and mix well. 3. To wrap rice, lightly grease the smooth side of the ba­nana leaf with veg­etable oil. Spoon 5 tb­sps rice mix­ture and roll it up firmly. Fold in the sides and se­cure with ba­nana leaf strips. 4. Steam rice for 40 mins. Al­low to cool slightly be­fore serv­ing with ren­dang or beef floss.
