STIR FRIED FOUR AN­GLED BEANS WITH CHILLI

Serves 4

2 cloves gar­lic 30g shal­lots 2 fresh red chill­ies, de­seeded,

cut into 3 parts 20g dried shrimp, rinsed 20g cook­ing oil 300g four-an­gled beans, sliced

into 2.5cm lengths 1 pinch salt, to taste 1. Finely chop the gar­lic cloves, shal­lots, chill­ies and dried shrimp. 2. Add cook­ing oil and saute the mix­ture. Stir con­stantly to avoid burn­ing. Keep cook­ing un­til the mix­ture be­comes fra­grant. 3. Add the four-an­gled beans and salt. Stir-fry un­til cooked. Serve hot.
