Cannoli with ricotta, chocolate and orange

250g fresh ricotta 100g caster sugar 40g grated dark chocolate 2 teaspoons finely grated orange rind 1/2 teaspoon vanilla extract 8 cannoli shells Icing sugar mixture, to dust
1. Place the ricotta, sugar, chocolate, orange rind and vanilla in a large bowl. Use a wooden spoon to mix until well combined. 2. Spoon the ricotta mixture into a sealable plastic bag. Use kitchen scissors to cut a 1cm hole in 1 corner of the bag. Pipe the ricotta mixture evenly into the cannoli shells. 3. Arrange 2 cannoli on each serving plate. Dust evenly with icing sugar and serve immediately.
