Can­noli with ri­cotta, cho­co­late and or­ange

250g fresh ri­cotta 100g caster sugar 40g grated dark cho­co­late 2 tea­spoons finely grated or­ange rind 1/2 tea­spoon vanilla ex­tract 8 can­noli shells Ic­ing sugar mix­ture, to dust


1. Place the ri­cotta, sugar, cho­co­late, or­ange rind and vanilla in a large bowl. Use a wooden spoon to mix un­til well com­bined. 2. Spoon the ri­cotta mix­ture into a seal­able plas­tic bag. Use kitchen scis­sors to cut a 1cm hole in 1 corner of the bag. Pipe the ri­cotta mix­ture evenly into the can­noli shells. 3. Ar­range 2 can­noli on each serv­ing plate. Dust evenly with ic­ing sugar and serve im­me­di­ately.
