New Zealand pork is a crowd-pleas­ing, flavour­some meat, so it’s a safe bet the dad in your life loves it. It’s also pretty sim­ple to cook and to make look a bit flash, so there’s no ex­cuse for not whip­ping up one of th­ese de­li­cious pork dishes for Fa­ther’s Day.

Re­move the pork and car­rots from the dish and set aside to rest. Put the cook­ing dish on the stove­top and add the vine­gar, along with the re­main­ing cup stock. Bring to the boil then sim­mer un­til re­duced and sticky.

Serve thick slices of the pork driz­zled with the bal­samic jus and the baby car­rots.

This is also great served with white bean puree and sauteed spinach.
