New Zealand pork is a crowd-pleasing, flavoursome meat, so it’s a safe bet the dad in your life loves it. It’s also pretty simple to cook and to make look a bit flash, so there’s no excuse for not whipping up one of these delicious pork dishes for Father’s Day.
Remove the pork and carrots from the dish and set aside to rest. Put the cooking dish on the stovetop and add the vinegar, along with the remaining cup stock. Bring to the boil then simmer until reduced and sticky.
Serve thick slices of the pork drizzled with the balsamic jus and the baby carrots.
This is also great served with white bean puree and sauteed spinach.
