Ras el hanout is a North African spice mix which can con­tain over 20 spices. Mean­ing “top of the shop”, it’s the best spice blend that the mer­chant has to of­fer. It’s avail­able from spice shops, delis and some su­per­mar­kets. Tagine can be made a day ahead; add a lit­tle ex­tra liq­uid on re­heat­ing if needed.
