Cele­riac purée

SERVES 4 PREP + COOK TIME 35 MIN­UTES

Bring 2 cups chicken stock to the boil in

medium saucepan; add 1kg trimmed, peeled and coarsely chopped cele­riac

(cel­ery root), re­turn to the boil. Re­duce heat; sim­mer, cov­ered, about 30 min­utes

or un­til cele­riac is ten­der. Drain. Blend or process cele­riac in batches with ½ cup cream un­til smooth. Serve cele­riac sprin­kled with 1 ta­ble­spoon finely chopped fresh chives.
